Review existing resources for deployment

Current deployment is using the default resources in the Helm chart. We should review what we need and make sure we're clear on how to change things at a later date for a production deployment. The following have caught my eye already but we should look more generally:

• Web pod replicas. Currently 6. Seems like a lot. Certainly for the dev cluster, but probably also for the production cluster at least initially.
• Storage for file uploads. Currently 10 Gb. Way too small for production or realistic testing on dev.
