There is no functionality (yet) to track the category during page views / cart updates / orders. This is a known limitation because I couldn't think how best to do this, to give meaningful stats.

Asked this on Piwik forums but didnt get any useful ideas. This post best explains the issues - http://forum.piwik.org/read.php?2,94447
