e2e-test broken

While trying to get familiar with hydra development and attempting to add a new feature I was totally blocked working on my mac/arm64 machine, and when opening a PR to test github checks, they were failing as well.
Had issues also using yarn link to test changes locally in joystream query-node.

Need to investigate and patch/update a few scripts/dependencies to get things working again.
