Why does a resulting schema turn out to be seemingly incorrect?

Let's find out! To do that, we need to ensure that the max_csv_rows parameter is respected, so we can work more quickly

Next, determine why some CSV files apparently have multiple types, which would explain why 'TEXT' turns up on some tables
