Configure parsing options screen: add counter that indicates how many rows/records will be generated after loading categories #69

Suggestion by @lozanaross after user testing: Add a counter for how many files/records exist under a category during the "Configure parsing options" screen. Ideally, the number of records is added as a large, bold number between the "Start over" button and the "Configure parsing options" heading at the very top of the screen.

We can remove / skip the (do not enter the Category prefix) line, as users (in user testing) intuitively do the right thing. They can either type Category: or not, and it works in both cases :-)
