With Patina (I've tested 1.16.5 and 1.17.1 so far, will test 1.20 soon) sheep in unloaded chunks, or even server with 0 players, still seem to process and eat grass. This ends up basically destroying the land after a while. Issue doesn't seem to appear with just Paper.
