Current state of the repo after the hackathon

• PR Mitgcm & eccov4 notebooks #2 is aimed at being the essential PR of the repo that handles several configuration tasks along with adding two notebooks (eccov4 and mitgcm)
  • The PR description shows all the tasks this PR targets (and which ones still need a bit of work - @erogluorhan will handle them)
• PR Add MOM6 example #5 aims to add the MOM6 notebook
• The remaining notebooks that need to be added to this cookbook are as follows:
  • Nemo example

  • Fancier example of transform
• Binder configuration: I am assuming the binder config will work once these PRs are merged and the actual cookbook is deployed.
