The main issues I see at the moment is that StartOS app currently do not support multiple services/containers, so some sort of workaround like the one made for BTCPayServer https://github.com/Start9Labs/btcpayserver-startos can be done.
Invoking here @kn0wmad for further clarity on what is the best way to proceed.
I believe a StartOS could be the easiest way for a new RoboSats coordinator to get started. At the moment, it seems some coordinators have been able to add it as a service to their existing Umbrel installation, but they have not published their developments.

BTCPay is likely our best example. Another option is to get everything into one container. I'd recommend one of these methods if you think the time is right, otherwise, StartOS 040 will support multi-container. This is still months out.
Now that we have a very well setup for a coordinator in production based in docker-compose (https://github.com/RoboSats/robosats-deploy/tree/main/compose) we could develop a much easier to run StartOS app.
