Correct broken links in public facing readme before zenodo publication, replace with github markdown
Update outdated numpy function calls in testing
Update testing version to 3.12 (note that an issue in version number parsing means I currently haven't included version 3.10 in the version matrix, as it is interpreted as 3.1)

@rccreswell @I-Bouros I wanted to tidy up this repo before adding to zenodo for the current paper, however there seem to be more issues with the tests and doc hosting that I can fix now (or have access to fix in the case of the docs). Would you be able to look at this and then we can issue a release with the updated fixes?
