Does this testbed require shibboleth-sp-dockerized and shibboleth-id-dockerized to be downloaded and installed before usage or is it self containing?

The testbed uses Dockerized containers. The IdP and SP, specifically are configured to use the "latest" images. These images maybe built locally using the individual image source (Dockerfile) or the lastest from the respective Docker Hub repos.

The other images get built upon first start-up.
