Related to #11 - because of storage issues data references in the workshop are out of date,

remove references to data that is no longer available
source persistent data
recreate examples with persistent data

tested B2 as a storage alternative, it works fine for EPT serving and also PDAL interaction over http.

migrate test data to backblaze b2
