Upgrade Kotlin version to 2.0 #542

Kotlin 2.0 was released yesterday, and has been in beta for a long time. This is not a big rush, but we should start experimenting with the upgrade. The first big advantage should be much quicker compilation times (great for local development, but also for the speed of CI runs).
