- 1 Tbsp vegetable oil
- Large onion, diced
- Red bell pepper, diced
- Minced garlic to taste, several cloves
- 3 cans of different beans. Pinto, black, and kidney are good defaults.
- Can of hominy or corn, or a cup of frozen corn (optional)
- 28 oz crushed tomatoes
- Broth or water
- Lots of desired spices; I like: chili powder, garlic powder, paprika, crushed red pepper flakes, cumin, salt & pepper, sometimes oregano
- Saute pepper, onion, and garlic in oil on medium heat until onion is translucent/starting to brown
- Stir in beans, hominy, tomatoes, and enough broth or water to cover it all. Bring to a bare simmer
- Simmer uncovered for about 30 minutes, stirring occationally, until noticably thicker
- Add spice to taste
- Serve over macaroni, rice, Fritos, or just on its own
