Consistent data paths

Different lessons refer to the data files to load in different ways. Some include the subdirectory and others do not. We should be consistent about this and include the subdirectory all the time.

A participant recommended moving all the of the data files that are actually used in the workshop to be in a single directory. We can consider that as well. It may be easier to navigate.
