Deploy a Full Node instructions don't include config-full-node, ends up with pex = true

The separate document for setting up a full node includes instructions to run init-full-node, but not config-full-node. This results in the full node having pex = true, hence connecting to public peers. As the "full node" is considered to be a node behind sentry nodes in the other parts of the documentation, this is somewhat confusing and perhaps unintended.

The separate document on setting up a validator does include the instructions to run config-full-node, so people who only follow that document should be good.
