Improve column header readability

As you can see in the screenshot, if the screen size is small and the columns of the data tables are shrunk to their smallest size, some headers aren't readable. (See Regulatory Approval and Interaction Score) We should make these a little more user-friendly

1. Wrap the column header text instead of truncating, where possible
2. If column spacing is too small for showing the header text, even with wrapping, consider switching to icons + a legend instead.

We should come up with a list of icons that would be good to add for these columns
