The amount of logs currently generated by the apps makes log aggregation very expensive

It exists already. You can overwrite LOG_LEVEL_STDOUT and LOG_LEVEL_CANTON to INFO. We are still testing this to make sure we can debug issues with just INFO logs so I would not recommend making that switch just yet.
