fix foreground and overlay plotting #109

Problem:

Foreground plotting is broken see here
Overlay plotting capability is broken. When we try to overlay plots they get overwritten instead.

Solution:

Move to more object oriented usage of matplotlib.
Fix bugs one at a time, with the goal of reproducing intended behavior of kappa, shear, background, and foreground plotting
