Replace deprecated Azure Dsv3-series #109

From the Azure docs on Dsv3-series:

These virtual machine sizes are a previous generation series. While older VM sizes are supported until further notice, we recommended using newer generations for improved performance and security.

Dsv5-series is a newer family with similar characteristics and the same price.

Azure catalog collection tests started to fail recently because Dsv3-series are not presented in all locations. This may be related to the family being deprecated: https://github.com/dstackai/gpuhunt/actions/runs/12116107167
