Contributors should join the EIC org and EPIC devs team, not ask to be a direct contributor (update the last section of README.md)

Consider making a CONTRIBUTING file (https://docs.github.com/en/communities/setting-up-your-project-for-healthy-contributions/setting-guidelines-for-repository-contributors#adding-a-contributing-file)
