@iPromKnight pointed me to https://github.com/dockserver/dockserver/blob/8d7bd27d99aed3eb1f78d488e9c44593cb3acc52/apps/addons/gluetun.yml#L14, which seems like a very sensible idea. There is a Kubernetes equivalent to override host values, will just need to confirm whether it's exposed in the common chart.
