Make NGINX blocker its own subfolder + use base NGINX to have NJS support

What?

Based on this closed https://github.com/esmero/archipelago-docker-images/pull/62/files make it a different esmero-web-botblocker with its own lifecycle/folder, correct some of the settings/scripts + add the docs that are missing here, import a newer NGNIX (from the official one) that has NJS support and only import the Cert Bot needs we have from jonasal/nginx-certbot. Also correct Documentation and push a new Tag
