Update help text for policies "Platforms" checkboxes

Problem

In the policy platform help text, parenthesis feel unnecessary and kind of clunky; I think it's clear enough that you are allowed to choose only 1. Plus the grammar is only correct if you use the plural "platforms", so feels like the "s" shouldn't be optional.

What is the expected workflow as a result of your proposal?

I see simpler help text.
