As the title says RivCreateLink ck used to bring me at the end of document
where I could paste the URL within the editing window (I've got the 'paste'
command mapped to which made this quite handy.

In the new "Input link location of..." that opens up I can't paste unless I
grab the mouse and click the Gvim 'paste' icon (or go in menu).

I'm sure there is a smarted way to do this so I wonder how do others do it
without mousing around?

no I can paste directly. have you mapped correctly?

:cmap <c-v> to check

:cnore <c-v> <c-r>+ to set
