Hi,
I'm trying to use this bundle but I cannot find the point in which the application calls the IDP and returns the assertion so I can use it.
Can you help me please?

Hi, the assertion is handled by the authenticator
You can notice that the token has the SAML attributes .

I highly recommend to use my other bundle that uses OneLogin library https://github.com/hslavich/OneloginSamlBundle
