Switch to different pdf library for shinylive #1

pikepdf is not currently supported with pyodide: pyodide/pyodide#3844. This is needed for standard form wizards using ShinyLive. Other potential options:

  • pypdf (pure python)
  • pymupdf (has instructions for installing with pyodide)

Done in pypdf branch ... not 100% functional (the forms can't be edited after writing data to them w/ the script) but it seems like this is being worked on (e.g., py-pdf/pypdf#2824 and linked issues)
