NuExtract integration / finetuning

Hi, I am a happy user of instructor, but I need a private, small model.
NuExtract seems great, https://huggingface.co/numind/NuExtract, do you have any suggestions about:

1. using nuextract in combination with instructor
2. collect data to further fine tune it?

Being able to not disrupt the current workflow then migrate to a finetuned nuextract is a super interesting match, but I need to build a POC quite fast to prove the value, so any suggestion about how to look would be appreciated.
