If my I suggest, there will great when I/we can edit those marked fields on the attached screenshot.

Related to green marked request:
This is a global setting. You can't customize this per course/module.
However, you can modify this section in local reminders settings Site administration -> Plugins -> Local plugins -> Reminders and changing Send As and No Reply Name respectively. These settings will be applied to all of the reminders sent from this plugin.

Probably this link https://docs.moodle.org/310/en/Mail_configuration might help understanding how (via ...) section is added to headers.
