I created a package with the option and the process does not run the profiles renew -type enrollment command.
A majority of our devices are in ABM and we have some that have been manually enrolled.
Does this process automatically determine the type of enrollment? Or should I create two separate packages.
Also, how can Self-Service be disabled from launching after a machine has been enrolled on the destination instance?

No check to see if device is ABM enrolled, calling the profiles renew command on those is harmless. If you don't like it running and failing though you can certainly create 2 packages.
