I just released https://github.com/janwilmake/ip-camera-to-s3-macos which allows for very storage and battery efficient recording of audio+video.

Creates chunks of 15 minutes of ±25MB each, on your S3 storage. Was fairly easy to setup with a regular RSTP IP camera. The goal would be to process it in the cloud further down the line, e.g. transcription, speaker segmentation, posture detection, etc, etc. With a private cloud store of your personal video streams there are tons of applications possible that could be useful.
