How to define variable in docx reference or template and nest them from md file?

Hello,
I'm newly new to pandoc and I try to produce docx letter from md file and from a docx template with variable included with the following syntax:
$surname$ $name$ etc...

How should I proceed ? I tried to do it by myself but with no success
