The most delicious Indian 'chaat' snack - basically an exploded samosa.

- 2-3 large samosas
- 1 cup soaked and boiled garbanzo beans/chickpeas
- 1/2 cup chopped tomato
- 1/2 cup chopped sweet onions (purple or white)
- chopped green chiles to preference
- chopped cilatro to preference
- sev to preference (you can find bagged in indian groceries, or buy online... or make if you've ample free time!)
- 1/4 cup cooking oil
- 2 tsp cumin seeds/powder
- 2 tsp coriander seeds/powder
- 2 tsp chili powder
- 1/2 cup yogurt
- 1/2 cup green chutney
- 1/2 cup sweet & sour chutney
- salt to taste
- Heat oil in a skillet and add chilis to start, then the onions
- Stir and, once onions are softed (2-5 mins), add garbanzo beans/chickpeas
- After a few minutes, add tomatoes, salt, and spices (cumin, coriander, chili powder)
- Add some water and let it all simmer
- Add samosas and break into chunks. Mix, and keep forming those bite-sized chunks of samosa into the pan!
- Turn off heat and move to plate(s)
- Top with diced onions, chiles, green churney, sweet & sour chutney, yogurt, sev, and chopped cilantro!
