Device ESPHome tested with version number field

Add a field for the version number of ESPHome the device has been tested/used with.

If there are breaking changes between ESPHome releses this will allow people to see if the device has been used/tested with their version. However this will require the device configurations to be kept up to date.

Could we build a CI pipeline to test configurations against esphome versions?
With a step to update the markdown and then commit to the repo?

@matt2005 I guess we could build a CI pipeline to do this but I would not know where to start in implementing this. Do you have any ideas?
