I found the possible issue with the above but it depends on your store setup.

In my case, my site was set to single store view so when saving the config for the plugin it was putting the store scope to default.

In the config.php it is hardcoded to use the scope website so I updated it to say default to match my site and everything started working as expected.

Hope that helps anyone with a similar issue.
