The extraction query contains the ?graphontology variable bound to graph_IRI + '#ontology' and filters out classes and properties whose IRI do not start with this prefix. That forces the prefix of the ontology to change with the graph IRI. Besides, the IRIs of the extracted classes and properties should be irrelevant.

We want to have (versions of) the same ontology in multiple graphs (production, testing deployments), so that we can, e.g., copy the production graph into a testing graph without changing its content.
