That's more of an apache question than rpi-monitor question, but as an apache novice, I think you can do this using mod proxy. https://httpd.apache.org/docs/2.4/mod/mod_proxy.html
You could conceivably do something like this in a config: ProxyPass "/monitor" "http://pi:8888/"
