For tags or lists in general, you should use the contains() function:

--filter "not contains(tags, ('x', 'y', 'z'))"

If it's only one tag, you can use

On hitomi, tags are capitalized and male/female tags are indicated by ♂/♀ respectively. Sorry, I should have considered that.
