Migrate to Lucid-Evoltion

I am currently working on migrating several project to Lucid-evolution since Lucid has fallen behind and does not support PlutusV3.

If I perform this upgrade on the minswapSDK will it be a welcome Pull request ? (I need this because one of my project relies on this SDK and is now migrated to PlutusV3)

I deprecated Lucid and most tests are passing, but I am unable to run the tests on my local Windows environment.

If you could take a look I think it is in a ready for testing state.
