scheduled actions for Docker builds, etc.

Hi folks!

Looking at the actions in this project, I'm not seeing scheduled jobs for things like the Docker build. It would be very useful to have regular (daily or weekly) builds of the default branch to make sure that things are working as expected.

If there is an appetite for implementing these scheduled builds, I would be happy to take that on. What do you think?
