Two flags could be helpful for many stores I manage which have logging off by default:

Log to a custom file (argument ECG And PSR2 fixes #3)
An optional force log param flag (argument Feature: Optionally log to a custom file or force logging which is otherwise disabled #4)

The Mage::log method signature for reference:

public static function log($message, $level = null, $file = '', $forceLog = false)
