Is there a good example of using drift detection somewhere along with a model implemented? Can it also be used for multivariate data?

Hello! Nope there is no good example yet. As far I'm aware we don't have support for multivariate drift detection yet, but then again that's hard to define and is problem specific. You could say that drift occurs when at least one of your variables drifts.
