Example image only has arm64 pushed.

Describe the solution you'd like

We should switch to the example image hosting both arm64 and amd64 once #324 is in.

Image has now been added to include both arm64 and amd64 on quay.io

When the user uses "pull" by default it will pull the architecture that matches the OS (which is intended).
