fix: extend test tls certs to 100-year validity #667

Some test TLS certs used in tls/client crates have expired, causing CI tests to fail (https://github.com/tlsnotary/tlsn/actions/runs/12113210870/job/33767822513?pr=664).

I extended the validity period to 100 years in the test certs generation script (https://github.com/tlsnotary/tlsn/blob/dev/crates/tls/client/test-ca/build-a-pki.sh), and regenerated the fixtures.
