config.json is overwritten with empty contents

Do I need to be more specific about ALL the configuration options?

It's getting overwritten every time I launch the proxy.

OS: MacOS 10.13.6 (17G66)

PS: I'd hope it's not out of the question adding command line overrides for some of the config options, like this one for example?
