remove requirement for anaconda

i have no idea why we are supposed to install anaconda to use jupyter for the recap.
for me on arch, installing jupyter-notebooks and using it as shown here: https://wiki.archlinux.org/title/Jupyter#Installation
and installing the java and racket kernels as instructed on their respective source pages worked perfectly, without requiring proprietary software
