Additional config options for paperless-ngx

There are lots of configuration options for paperless that are only accessible via config file or environment variables, not via the UI. It would be nice to have a way to supply those in the addon config.

Also very nice would be the option to change the data directories, e.g. use a network drive that is mounted under /media/my_network_share
That would be especially nice for the consume directory, so that it is directly accessible from a network-connected scanner.
