For the latex template(s), the \def\doctitle{} is within the base latex template for doorstop.

Should think about making this more of a basic template and having templates officially being used in requirement repositories.

Related/Initial Comment: just realizing that we're baking in a project name here... not ideal. Maybe make an issue to resolve this one day?
