This PR fixes directory name in Dockerfile and includes some corrections regarding the provider name

How has this code been tested

• examples/workspace-inline-aws.yaml tested with uptest successfuly: https://github.com/upbound/provider-opentofu/actions/runs/11035847881

• examples/workspace-inline.yaml tested manually with the image: index.docker.io/turkenf/provider-opentofu:v0.0.0-5.ga3c8a8b which built from this PR
