This plugin doesn't seem to work on my side. do not know what is happening

Looks like the same issue I was experiencing... see #26

If you replace
"vite-plugin-imagemin": "^0.6.1",
with:
"vite-plugin-imagemin": "studiokloek/vite-plugin-imagemin#tmp-release",

in your package.json and update your modules, does it work?
