Better GraphQL query examples needed

There aren't that many GraphQL query examples in the documentation and there should be more.

Also, one of the only example queries uses a variable that is not explained to users reading the documentation: e1b42ad#diff-6a74558470c290cd2fe8ba8c7ae8a126068b247efcae07b1cfb85ccd7198dd38R103

Also, some of the documentation is a tiny bit out of date for the GraphQL plugin. More configuration options have been added that we should probably explain.
